WHY WE CHOSE PEARLS
When Klamath Basin Fresh Direct was formed, our members teamed up with leading potato experts to select the specialty potato varieties we would offer on our "menu". Our farmers approached the selection process with patience and diligence, exploring the hundreds of specialty varieties breeders had to offer. We looked for potatoes that were aesthetically pleasing, had defining culinary properties, and kept our eyes open for any unique characteristics that would set these potatoes apart from the rest. After sorting through a plethora of top-of-the-line varieties, we decided on a most unique and tasty potato and gave it a name-Organic Klamath Pearl. KBFD takes pride in being the only growers of this truly exceptional potato. The Organic Klamath Pearl is truly one of our most prized gems.
DESCRIPTION AND USES
Klamath Pearl Potatoes are petite round potatoes, perfect for salads, roasting, grilling, or frying. They provide a delicious way to round out a healthy diet. We harvest them early to capture peak freshness and flavor quality. Pearls are unique for their exceptional culinary characteristics that truly make them tastefully superior to other potato varieties. When cooked, even boiled, their waxy skin does not rupture which allows them to retain their sugars giving them a complex sweet flavor. Their starches do not break down during the cooking process allowing them to retain their firm texture.
SELECTION, STORAGE, AND HANDLING
Klamath Pearl Potatoes are hand-selected for superb quality. We select for small, firm, pearl-shaped, defect-free potatoes. We use special packaging that allows the potatoes to breathe freely while also protecting them from light, keeping them as fresh as possible from packing to retail. They are best if stored in a cool, dark, well-ventilated area. To preserve the nutrients and allow maximum taste complexity in these wonderfully healthy treats, leave the skins on and scrub gently in water using only your fingers, before using.
